Brownie Marshmallow Cookies Recipe

This recipe is a family favorite, but it had been a while since we made it. We've kinda been on a chocolate-marshmallow "kick" since making S'mores Snack Mix so Brownie Marshmallow Cookies sounded like the perfect Sunday afternoon treat!

After describing the combination of delicious chocolate cookie topped with marshmallow and frosting, my kids' eyes got all glazed over and said they couldn't wait to try them. My 4 year-old even asked if she could have two before even tasting a cookie!


Ingredients:

1 3/4 cup flour
1/2 tsp salt
1/2 cup shortening
1 egg
1 tsp vanilla
1/2 tsp soda
1/2 cup cocoa
1 cup sugar
1/2 cup milk
large marshmallows
16 oz chocolate fudge frosting

Yield's 2 dozen.



Directions:

1. Preheat oven to 350 degrees. Mix all ingredients together except marshmallows and chocolate fudge frosting with an electric mixer. 



2. Drop onto cookie sheet in balls. 



3. Bake at 350 degrees for 8 minutes. Remove from oven and place 1/2 marshmallow on top. Bake an additional 2 minutes. 



4. Remove from oven. Let cool, then frost with chocolate icing.
