One of my favorite cookies at Christmastime is gingerbread so when I came across a recipe for these Gingerdoodle Cookies on Pinterest I just had to try them! And let me tell you, I was not disappointed in the least. They taste like your traditional snickerdoodle cookie with a gingerbread twist; crisp sugary shell and soft molasses center... just the perfect combination if you ask me!
