Weekend Bites no. 59: Chicken Pot Pie Cupcakes

For Weekend Bites this week I'm sharing one of my favorite comfort meals for fall, Chicken Pot Pie Cupcakes. With only 5 ingredients it's super easy to make on week nights. For picky kids like mine you can also dice the vegetables and put them under the chicken and cheese. Thanks for joining us on Weekend Bites and be sure to link up below!

Chicken Pot Pie Cupcakes

Ingredients

  • 2 cups diced chicken breasts, cooked
  • 1 can Grands biscuits
  • 1 can cream of chicken soup
  • 1 cup frozen mixed veggies, steamed
  • 1 cup shredded cheddar cheese
  • Salt and pepper, to taste
Directions
  1. Preheat oven to 400 degrees
  2. Press half a biscuit into each cupcake tin
  3. Add a spoon cream of chicken soup
  4. Top with steamed mixed veggies and shredded cheddar
  5. Bake for about 12-15 minutes till dough is golden
  6. Let rest for a couple minutes and enjoy!
