Mint Chocolate Chip Cookies


One of my favorite things growing up was helping my mom bake cookies, and it's a tradition I've carried on with my own kids-- especially around the holidays!


I think it's fun there are so many different kinds of chocolate chips at the store. In this recipe we used holiday semi-sweet chocolate chips, Christmas Mint M & M's, and white chocolate chips.




The secret to the perfect textured cookies? We use Crisco shortening in place of butter.


Mint Chocolate Chip Cookies

3/4 cup brown sugar
3/4 cup white sugar
1 cup shortening
2 tsp vanilla
2 eggs
1/2 tsp salt
1 tsp soda
2 1/4 to 1/2 cups flour
1 1/2 cups holiday semi-sweet chocolate chips
1 cup white chocolate chips
1 cup mint M & M's

Cream sugars and shortening until light. Add remaining ingredients down to chocolate chips until well mixed. Stir in chocolate chips. Place dough balls on ungreased cookie sheet. Bake at 350 degrees for about 10 minutes. Makes about 2 1/2 dozen cookies.

ENJOY!! Eat them with milk or gift some to family and friends. We included some with our Chocolate Peppermint Cookies as neighbor gifts.
