Chicken Doritos Casserole Recipe

Doritos Casserole is a tasty Mexican dish with a unique flavor to others you may have tried. The combination of chicken mixture, Doritos, and cheese is amazing! Make it for a quick, delicious meal any night of the week.



Ingredients:


2 cups shredded cooked chicken
2 cups shredded Mexican cheese blend (divided)
1 (10 oz) can cream of chicken soup
½ cup milk
½ cup sour cream
2-3 tomatoes
1 packet taco seasoning
1 large bag Doritos
shredded lettuce (optional)
diced tomato (optional)




First, cook and shred the chicken. I boiled mine in a pot of water, but cook it any way you like (stove, oven, etc.). To save time use canned chicken or a ready-cooked rotisserie chicken.


Preheat the oven to 350 degrees. In a medium bowl mix together the shredded chicken, cream of chicken soup, sour cream, milk, 1 cup of cheese, taco seasoning, and 2 tomatoes diced (note: I pureed the tomatoes in our Magic Bullet because my family is weird about tomato chunks in their food and it still turned out great).


Then layer crushed Doritos in the bottom of a 9 X 13" pan, topped with half of the chicken mixture, followed by another layer of Doritos, and the rest of the chicken mixture. Sprinkle the other cup of grated cheese on top. Add more crushed Doritos (if desired).



Cover with foil and put into the oven. Bake at 350 degrees for 25-30 minutes till hot. Remove from oven and top with shredded lettuce and sliced tomatoes if desired.
