Barbecue Chicken Pizza Recipe

These days moms (and dads) don't have the time or energy to spend two or three hours preparing dinner every evening. I was excited when Debi asked me to come up with a family friendly recipe for her to share because I had just wrapped up my 60 Freezer Meals for $300 project and had the perfect quick and easy dinner I was dying to share! This BBQ Chicken Pizza is so easy to make and the flavor is amazing!  My one and two year old love it too! I've made it 3 or 4 times and every last slice gets devoured within minutes! The mix of the zesty BBQ sauce with juicy chicken and a kick of cilantro is the perfect flavor combo. What's great about this recipe is you can make it when you have some free time and put in the freezer. Then, on a night you are in a hurry and haven't had time to plan dinner just pop it in the oven and BAM! Instant dinner. 



Ingredients:

For the dough:
 
1 packet of active yeast
1 cup lukewarm water
1 tsp sugar
2-3 cups flour
1/2 tsp salt
1 tbsp canola oil

For the toppings:

1 cup BBQ sauce (I used Sweet Baby Ray's)
1 chicken breast, cooked and shredded
1/4 cup red onion, diced
1/4 cup cilantro, diced
2 cups mozzarella cheese

Directions:

Mix water, yeast and sugar in a medium bowl and let rest for 15 minutes.

Add 1 cup of flour and mix thoroughly.

Add salt and then 1 more cup of flour, mix again.

Flour a clean surface and cover your hands with flour; make sure to get in between your fingers too because that's where the dough tends to stick the most. Move dough from bowl to floured surface and  knead for 3-4 minutes. Dough is done when you can pinch it and it doesn't stick to your hands. 

Pour oil into another bowl and work it around the sides. (you want the sides to be covered in oil)

Move dough to bowl and roll it around the sides so it gets covered in oil.

Place a damp towel over bowl and let rise for 40 minutes.

After dough has risen punch down a few times and knead for one more minute.

***If you want to skip making the dough Winco has fabulous pre-made pizza dough in their deli section for $1.50. They make white and wheat options as well.

Preheat oven to 425°

Spread dough out onto pizza pan. (if you don't have a round pizza pan you can use a jelly roll pan or Winco also sells a 3 pack of disposable trays for $1.50)

Spread BBQ sauce evenly across dough making sure not to cover crust.

Pour about 1 1/2 cups of cheese over sauce.

Spread chicken out evenly across pizza.

Sprinkle onion and cilantro evenly and then top with remaining cheese.

Bake for 15-20 minutes. I've found it turns out best when cooked for 17 minutes but your oven may be different.

Let cool and then slice and enjoy.


If you wanted to make this ahead of time just cover with plastic wrap and then aluminum foil and place in the freezer. Take it out of the freezer while the oven is preheating to let it thaw a bit.
